Keto Ham Hash

Leftover ham is never a bad thing…except if your family doesn’t eat pea or bean soup to use up that delicious ham bone. Since we became Paleo and Keto, beans are out of the question as they cause too much inflammation for my body. I was able to make two different recipes this year to use up our ham.
Ham Hash
- 2 cups diced ham
- 2 cups diced onions
- 2 cups diced celery root(peeled)
- 2 tbl fat of your choice(I prefer bacon drippings)
- seasoning to taste
Directions:
- Melt the fat in a large skillet. Cast iron is amazing for getting the crispy edges our family loves. Saute the onions and celery root just a bit before adding the ham.
- Keep the heat at medium to high to keep everything crispy. Saute until the celery root is tender and everything has a slightly crispy edge.
Alternative way of cooking: I used my NuWave Brio Air Fryer to cook this recipe the second time and everything came out even more crispy! I warmed it for about 5 minutes and then cooked it for a total of 20 minutes.
