Five-Way Beef Mix

This recipe is used as part of my once a month cooking recipes or batch cooking. It may be used for 5 different recipes just by making this one recipe first.

  • 5 lbs of ground beef
  • 4 onions, chopped or 1 cup dried
  • 8 cups diced peeled potatoes
  • 6 cups diced carrots
  • 1/3 cup cornstarch
  • 1/2 cup cold water
  • 1 (24 oz) pkg frozen peas, thawed
  • 4 tsp seasoned salt
  • 1 tsp salt
  • 1 tsp pepper

Brown beef and onions in a large skillet, set aside. Place potatoes and carrots in a 5-quart Dutch oven. Add water to barely cover and bring to a boil. Simmer vegetables over medium heat until crisp-tender, about 15 minutes. Stir cornstarch into 1/2 c water and then add to vegetable mixture. Stir until slightly thickened. Add the remaining ingredients. Cool and then ladle into four 6-cup freezer containers, leaving 1/2 inch air space. Label with date and contents. Use within 2 months. Makes 4 packages or about 24 cups.
